Mumbar Dolması ( Adana) Tarifi İçin Malzemeler

Bu yemeğimiz; Adana’mızın, Tarsus’umuzun kısacası Çukurova ‘mızın geleneksel lezzetlerinden. Belki farklı yörelerde farklı isimlerle de yapılıyordur. Bilenleriniz, sevenleriniz, sevmeyenleriniz mutlaka vardır. Koyunun kalınbağırsağının temizlenerek, iç harç ile doldurulmasıyla yapılan bir çeşit dolma türüdür.
İç harç için, sebzeler küçük küçük doğranır. Pirinç, salça, sıvı yağ, limon suyu ve baharatlar eklenir ve iyice harmanlanır. Bağırsın yağlı olan dış yüzeyi, dışta olacak şekilde tutulur, uç kısmı biraz içeriye gönderilerek doldurmaya başlanır. Doldurdukça bağırsak ters yüz olmaya başlar. Doldurma esnasında ve sonrasında hijyen açısından ters yüz olan bağırsağın iç kısmının, henüz doldurulmamış bağırsaklarla temas etmemesi gerekir. Doldurma işlemi tamamlandıktan sonra bolca tuz atılarak, iyice ovalanır ve yıkanır. Bu işlem 4-5 kere daha tekrarlanır. En son, biraz sirkeli suda bekletilir. Bu arada pişireceğimiz tencereye biraz sıvı yağ ve çok az salça alınır ve kavrulur, hemen ardından doldurduğumuz bağırsaklar tencereye alınır ve kavurmaya devam edilir. Son olarak üzerine çıkacak kadar su ilave edilir ve pişirme işlemi yapılır. Pulbiber ve kimyon eşliğinde servis yapılır. Afiyet olsun
