Adana Sarı Burma Baklavayla yarışan, bazen geçen, bazen çelme takan tatlıdır. Baklavadan daha kıtır ve daha yumuşaktır. Büzgü şeklinde hazırlanır. Biraz oturtmaya benzer.
Sarı burma tarifi için malzemeler;
Hamur için 2 yumurta 1 çay bardağı yoğurt 1 çay bardağı su 1 çay kaşığı karbonat Yarım çay bardağı sıvı yağ 5 su bardağı un 1 çay kaşığı tuz Hamur açmak için İç harç için 1 su bardağı çekilmiş ceviz 3 çorba kaşığı toz şeker Şerbet için 4 su bardağı toz şeker 5 su bardağı su 2 çay kaşığı limon suyu Üzeri için
Sarı burma Nasıl Yapılır
Şerbet için; Su ve şekeri tencerede kaynatın. Koyulaşması için 10 dakika kısık ateşte kaynatmaya devam edin. Limon suyunu ekleyip ocaktan alın ve soğumaya bırakın. Unu hamur tahtasına alıp ortasını havuz gibi açın. Yumurta, yoğurt, su, sıvıyağ, karbonat ve tuzu geniş bir kapta karıştırın. İçine azar azar un ekleyip pütürsüz ve yumuşak bir hamur elde edinceye kadar yoğurun. Hamuru 10 eşit parçaya ayırıp üzerlerini temiz bir bezle örtün ve 20 dakika dinlendirin.
İç harcı için; Cevizi toz şekerle karıştırın. Bezelerden bir tanesinin üzerine nişasta serpip oklavayla ince bir yufka açın. Üzerine 1-2 çorba kaşığı şekerli ceviz serpiştirip yufkayı ortadan ikiye kesin. Yufkanın kesilmiş tarafına oklavayı yerleştirip yufkayı sararak rulo yapın. Elinizle oklavanın iki ucundan ortasına doğru toplayarak büzün. Sıkıştırılmış yufkayı yavaşça oklavadan çıkarıp yağlanmış tepsiye yerleştirin. Kalan bezeleri de aynı şekilde hazırlayarak tepsiye dizin. Sarı burmaları 4 parmak uzunluğunda keserek dilimleyin. Tereyağını tavada kızdırın. Yağı tepsideki tatlının üzerine dökün. Önceden ısıtılmış 180 dereceye ayarlı fırında 25-30 dakika pişirip soğuk şerbeti üzerine gezdirin. 30 dakika bekletip servis yapın.
