Taze keçi peyniri içerdiği nem miktarıyla inek sütünden yapılan bazı peynirlere göre daha az yağlı. 30 gram keçi peynirinde 75 kalori ve 6 gram yağ var. Cheddar peynirinde ise 113 kalori ve 9 gram yağ bulunuyor. Beslenme uzmanı Hilary Schwoegler, keçi peynirindeki daha küçük yağ moleküllerinin daha kolay sindirildiğini söylüyor.

Keçiler ilkbaharda doğum yaptıkları için sütleri protein yönünden daha zengindir ve kışın yapılan keçi peynirine göre daha lezzetlidir. Bahar sütüyle yapılan peynirde taze çimen, yonca ve yabani çiçeklerin notaları oluyor. Tadı da daha hafif ve lezzetli.
