Adana kebaptan sonra, memleketin iştah açan lezzetlerinden sadece birisidir. "Kaz Başı" lezzeti gelin sizlerle birlikte tarifi inceleyelim... Kaz Başı Lezzeti İçin Malzemeler 1 Adet Orta Boy Kaz 2 Adet soğan 2 Adet havuç 2 Adet kabak 4 Diş sarımsak 3 Adet defne yaprağı 2 Tutam tane karabiber 1 Yemek Kaşığı tuz 2 Adet yufka 1 Çay kaşığı un 1 Tutam taze kekik İç harcı (pilav) için: 1 Kaşık tereyağı 1 Bardak yıkanmış pirinç 100 Gr badem 75 Gr kuş üzümü İlk adım olarak: ilk olarak kazı temizleme işlenminden haşlıyoruz. Daha sonra içerisine tad verecek olan dilimlenmiş soğanları, kekiği, defne yaprağını, havuçları, kabakları, sarımsakları ve baharatları ekleyip karıştırıyoruz. 2,5 buçuk saat haşlamaya bırakıyoruz.
2. Adım: iç pilavı hazırlamak için kavurduktan sonra kuş üzümünü, bademi, çam fıstığını, tuzu, kekiği, pul biberi ekliyor ve iyice karıştırıyoruz. Pilavı demlemek için haşladığımız kazın haşlama suyunu kullanıyoruz. 3 Bardak suyu pilav tenceresine ekliyor ve pilavımızı hazırlıyoruz.
3. Adım: kaz haşlandıktan sonra ince ince dilimliyoruz. Derin bir kabın içerisine zeytinyağı ekledikten sonra bir adet yufkayı içine seriyoruz. Kazı yufkanın dibine diziyoruz, hazırladığımız iç pilavı da kaz etinin üstüne koyuyoruz ve yufkayı güzelce kapatıp, ters çevirip fırın tepsisine alıyoruz. 180 derecede 5 dakika fırında pişiriyoruz.
Son olarak: Sos için, önce bir tavada tereyağını eritiyoruz. Daha sonra iki kaşık unu tavaya ekliyor ve karıştırmaya devam ediyoruz. İki kepçe de kazı haşladığımız suyu ve tuzu tavaya ekliyor, sosumuzu hafif ateşte karıştırmaya devam ediyoruz.
