Adana mutfağı oldukça zengindir. Şırdanın en yakın dostudur. Ancak şırdana göre biraz daha serttir. Bunun nedeni de kırk kat sarılıyor olmasıymış. Belki eskiden böyleydi, şimdi daha az sarılıyor ama lezzetinden hiçbir ödün vermiyor. Malzemeleri 1 çorba kasesi pirinç 2 adet orta boy domates 2 adet orta boy kuru soğan Ufak bir kase ince kıyılmış iç yağ 1 kahve fincanı sıvıyağ 1 tutam maydanoz 1 tutam nane 1 çorba kaşığı salça Bol miktarda karabiber, pulbiber, kimyon ve tuz Yapılışı Şırdanları bol tuz ile ovup bol su ile yıkayın. Limonlu ve tuzlu suda bir kaç saat bekletip temizleme işlemini tekrar yapın. İç malzemeyi hazırlamak için domateslerin kabuklarını soyup ince ince doğrayın. Soğanı ve maydnoz ile naneyi de kıyın. Pirinci bol suda yıkayıp iç yağı ekleyin. Salça, baharatlar ve sıvıyağı ekleyip iyie karıştırın. İç malzemeleri iyice temizlediğiniz şırdanların içine doldurup ağızlarını dikin. Geniş bir tencereye şırdanları dizip üzerini geçecek kadar su koyun. Pişerken çatalla kontrol edin. Pirinçler piştiğinde ateşten alabilirsiniz. Bol pul biber ve kimyonla servis edin.
