Karakuş Tatlısı (Adana) Tarifi İçin Malzemeler Hamuru için: 1 adet yumurta 1 çay bardağı sıvı yağ 1 çay bardağı yoğurt 1 tatlı kaşığı sirke 1 çay kaşığı tuz 1 çay kaşığı kabartma tozu 3-3,5 su bardağı un Şerbeti için: 3 su bardağı su 3 su bardağı şeker 1-2 damla limon suyu Açmak için: İçi için: 1 su bardağı dövülmüş ceviz Tarçın Kızartmak için: Karakuş Tatlısı (Adana) Tarifi Yapılışı
Önce şerbeti hazırlayıp soğutalım. Tencereye şerbet malzemelerini alıp kaynatalım. Fokur fokur kaynayınca kısık ateşte 5 dk daha pişirelim. Hamur malzemelerini bir kaba alıp kulak memesi yumuşaklığında bir hamur yoğuralım. Hamuru 6 bezeye ayırın. Daha ince açabilirseniz 7’ye, daha kalın açıyorsanız 5′ e de bölebilirsiniz. Bezeleri yaklaşık 15 dk kadar dinlendirin. Bezelerin altına ve üstüne nişasta serperek açabildiğiniz kadar ince açın. Hamur gerçekten çok kolay açılıyor. Açtığınız yufkayı oklavanın yardımıyla 4-5 parmak genişliğinde akordion veya kağıttan yelpaze yapar gibi bir ön bir arka olacak şekilde katlayın. Yufkayı yarıya kadar katlayınca, 3 cm aralıklarla ceviz dizin. Kalan yufkayı da cevizin üstüne gelecek şekilde yelpaze gibi devam ettirin. Cevizlerin aralarında kalan boşlukları iki parmağınızla sıkın. Sıktığınız yerleri bıçakla kesin. Kestikten sonra karakuşlarımızın uçlarını tekrar iki elinizle ortaya doğru sıktırın ( kızartırken tombul olması için). Karakuşları kızgın yağa atın ve ateşi kısın. Her iki tarafı da çevirerek kızartın (yağ çekmiyor). Kızarmış tatlıları sıvı yağdan alıp direk soğuk şerbete atın. Arkalı önlü iyice şerbete bulansın. Yufkaları ince açamıyorum derdine düşmeyin, kızarınca gayet gevrek ve tadı değişmeyen bir tatlı elde edeceksiniz. Tatlılar hazırlandıktan sonra isteğinize göre tarçın, hindistan cevizi veya toz fıstık ile servis yapabilirsiniz. Afiyet olsun.
Not: Tatlılarınızı önceden hazırlayıp derin dondurucuda veya buzlukta saklayabilirsiniz. Donduktan sonra poşetleyip o şekilde saklamaya devam edebilirsiniz. Kızartmak istediğiniz zaman buzu çözülünce kızartabilirsiniz bir alternatif olarak. Tadında veya kızartılmasında hiçbir sorun çıkmaz. Tekrardan afiyet olsun.
