ADANA BİCİ BİCİ Hava sıcakları insanın tenini deli gibi yakmaya başladığında Akdeniz'de, özellikle Adana'da serinlemek için insanların başvurduğu birkaç şey vardır. Birincisi soğuk su, ikincisi deniz, üçüncüsü de bici bici. Onlarca yıldır seyyar satıcılar tarafından mahalle aralarında, ana caddelerin üzerinde, parklarda satılan lezzetlerden biri. Temeli nişastalı bir muhallebiye dayanıyor. Nişasta ve sudan elde edilen muhallebi, tepsinin içine dökülerek en az 4 saat dinleniyor. Soğuyup, kıvamını toparlıyor. Üzerine rendelenmiş buz serpiliyor. Yetmiyor, güllü bir şerbet ve pudra şekeri ilave ediliyor ve afiyetle yeniliyor. Üzerine meyve ilave edilip ''karsambaç'' denilen ismiyle de servis edildiği oluyor.
Muhallebisini hüpleterek yemek ayrı, şerbetini pipetle içmek ayrı keyifli. Aranızda ''Olsa da yesek'' diyenleriniz olacaktır. Unutmadık onları, evde de bici bici keyfini yaşayın istedik.

Muhallebiyi hazırlarken nişastanın içinde kalıntılar bırakmamasına özen gösterin. Kıvamı dinlenirken daha da yoğunlaşacaktır fakat kıvamı size yeterince koyu gelmezse pişerken içine bir miktar daha nişasta ekleyebilirsiniz. Gıda boyası kullanmak istemezseniz bir miktar loğusa şekeri kullanabilir ya da şerbeti gıda boyasız hazırlayabilirsiniz. Loğusa şekeri kullanmak isterseniz suyun içinde eriterek kullanmanız gerekiyor.
Nasıl Yapılır?
Nişasta ve suyu bir tencerenin içine alın. Çırpma teli yardımıyla karıştırarak pişirin. Katılaştığında ocaktan alıp bir borcamın ya da tepsinin içine döküp dolapta en az 4 saat kadar dinlendirin. Şerbeti için: Tüm şerbet malzemelerini bir kabın içinde karıştırın ve dolapta soğumaya bırakın. Birleştirme aşaması: Dinlenen muhallebileri küp şeklinde kesin. Servis kaselerinin tabanına muhallebilerden koyun. Üzerine şerbetten dökün. Üzerine rendelenmiş buz ilave edin. Muz ve pudra şekeriyle süsleyerek servis edin.
